The meaning of the symbols you highlighted:
Partly cloudy (or mostly sunny)
Mostly cloudy (at night)
Partly cloudy (at night)
P.S. during the night time, the sun symbol is replaced by the moon symbol.
I think the Windy point of view is totally correct:

It´s understandable that some people will be offended, but the way to change it is through OSM. Better that than no windy maps ;)
Also, windy has no obligation to provide politically correct information. It´s just a tool, if it´s useful use it, if it´s not accurate enough for your useage, then use something else.

Your interpretation is correct. In the meteogram (not the basic one), you can visualize the parameters with curves or color. This is the case for the delta between temperature and dew point but also for the pressure. By doing that, you can easily visualize how those parameters are going to evolve in the next days
