The idea is to have an easy picture of what is going on in the forecast of my place. Information such as presented in the Meteoblue app,  showing the mm expected for each day, are very helpful to plan the week.  Windy only shows the tiny little drps that doesn't help much.
Moreover, Meteoblue app shows the value of max and min temp for each day, which is precious! Windy only shows max, i never understood why. Min temp are also very important.
I really would like to have only one app but at this moment I can't, so lets keep searching

No, that is not possible because Windy uses only deterministic weather models. Probability is given by ensemble models that would make this app very heavy.
Windy prefers to show several models which enable you to get an idea about the chance of rain. At bottom of meteograms see Compare to get a multimodel panel:

I wouldn't expect a fast or useful answer from the BOM.
I have been looking at Weather Underground for real time very local data historical weather data particularly rain accumulation graphs. You often even in rural areas have a wide selection of reasonably accurate low cost weather stations and you get very frequent updates you just don't get from the BOM and data that isn't available in Windy like rainfall history. About 5% of the stations are lower quality results but looking at the map and comparing nearby monitors output you can quickly eliminate them. It is a reasonable crowd sourcing weather project that fills a gap that Windy or BOM don't provide.

You might even try a call to the local wx office, as each office sometimes has their own wx and hydrology tools/outputs available for public use (put on their local page, actually). At least, it used to be that way about ten years ago or so. I assume not much has changed with that. The wx office page on the NOAA/NWS site or the local office phone number would be your best bet for such a contact.

Again, maybe it's not acculumated rain in the latest 1/2 day increments, but it is a start.

Yes, the way the ensemble model calculates the probability is as you explain : for instance for the rain, each dot of the 21 dots can give a different level of rain (1mm, 4mm, 10mm,...). Based on that set of different levels of rain, the model can calculate several probabilistic values such as the average, variance,... This will allow you to quantify the risk of rain
Now, if the model has to adopt the same approach for many other parameters, such as pressure, temperature,... And for each parameter do the 21 calculations (do not forget that each calculation is the equivalent of a single deterministic calculation), computional limitation will be the issue if the model keeps the same grid. To overcome this problem, grid is bigger, calculation of the 21 dots for the different parameters becomes ok but accuracy will decrease.
Computational calculation is key. In average, weather forecast improves by one day every 10 years thanks to the computer (super calculator) progress

<p dir="auto"><strong>Synopsis</strong></p>
<p dir="auto">The largest part of western and Central Europe is under the influence of a long-wave trough and as a result, strong WAA is found in eastern parts of the continent with unseasonably warm conditions.</p>
<p dir="auto">Several embedded short-wave troughs can be found in the forecast maps, one of them is about to create favorable conditions for severe weather in Mediterranean. Another trough is approaching from the Atlantic, reaching Ireland by the end of this forecast.</p>
<p dir="auto">A few storms will develop at the leading edge of this trough, reaching Portugal in the early morning of Wednesday.</p>
<p dir="auto"><strong>Discussion</strong></p>
<h3>Croatia, Bosnia and Herzegovina, Montenegro, Albania, S Italy, and Greece</h3>
<p dir="auto">The axis of the trough over the Mediterranean becomes negatively tilted, with a jet streak extending from Tunisia towards the Balkans. The mid/low-level vorticity maxima will provide large-scale lift of very moist air masses (9-11 g/kg mixing ratio) over the Ionian Sea and steep mid-level lapse rates will result in high CAPE values.</p>
<p dir="auto">An environment SW of Albania and Greece, characterized by 1000-1500 J/kg MLCAPE, 15-25 m/s DLS and more than 150 m2/s2 SREH0-3km will be conducive for the development of severe storms. A few supercells are expected, able to produce severe wind gusts, large hail, tornadoes, and excessive rainfall. Large hail is expected in the southern part of the level-2 area, with the least favorable environment in Albania (lower NCAPE).</p>
<p dir="auto">The most intense convective activity is expected to reach Greece and Albania in the late afternoon or night of Tuesday, while in the morning, storms will affect mostly offshore areas and the coasts of S Italy. In southern Italy, flash floods will be the main threat, as well as in the rest of the Balkan States during the early morning of Wednesday marked with a level-1.</p>
<p dir="auto">Tornadoes are expected mostly in the level-2 area where low-level shear and helicity will be maximum, but also waterspouts are expected in South Italy.</p>
