The wind direction shown by moving arrows is still available. You just need to turn ON the Particles animation.
By the way the color scale does not show the direction but the wind force

Wind is not missing in the main/quick menu on the map. And wind is the default layer as soon you open Windy. Thus there is no issue !
Same in the phone app, when you open the menu.

Have you unticked Wind in the longer menu list? This is probably the reason why you don't get Wind in main menu.

Cela m’arrive aussi de regarder le courant jet vers 250 hPa ainsi que les vents à 500 hPa même si ce sont ceux qui sont au niveau des vagues qui m’intéressent avant tout.
Je regrette que Windy ne visualise pas un calque de hauteurs géopotentielles en couleur. Ces données ne sont disponibles que sous la forme d’isohypses qui sont moins parlantes. Et pourtant ce n’est pas faute de l’avoir demandé à plusieurs reprises !

I agree, it’s better to have dense/strong colours for strong winds and lighter colours for light wind or near no wind.
But you may change the colour scale for most of layers and specially for Wind. So you may have your own colour range for wind:
