Hello, would it be possible to have a function where you select a journey, and the weather forecast for the entire route (incl. Set of departure time)?

Yes, this is possible but only on windy.com website, on desktop, not in the app (and not in Windy Maps app).
Use the Route planner for a trip by car, boat or plane. Even if you are hiking:

Right click to select Distance & planning.
