Any SIM compatible solar-powered weather stations on the market for off-grid?

My Paramotor flying group would love to install a weather station for reporting at one of our flying sites, but it's kind of off-grid. Any good setups for using IoT SIM cards and solar power we could look at which uploads data to Windy?
