On my desktop (Chrome) the default is ECMWF; but on my Android phone it is METEOBLUE. I know I changed it to Meteoblue - but can't figure out how to change the default. So my question is, if you cannot change the default - why is it different on Android than it is on the browser?

I don’t think you saved Meteoblue as default model on your phone. This is not possible in the windy com phone app. Meteoblue is only available in the point forecast panel. Or post a screenshot to show what you mean.
To save a model as default both in the mobile app and on the browser, go to Settings -> Start-up layer and location -> Start-up layer -> Use last overlay.
At start-up you’ll get the same layer and same model when you left the app. That works if you don’t use the widget to open Windy.
