Before the update I used to be able to pick a location like a certain mountain summit whilst zoomed in and then zoom out and it stayed on the exact location, but now as I zoom out the location moves, is there a way to stop this ?

I think you should untick “Move the map ….”
Click first on the 3 dots in bottom right corner.
