But now, I would like to remove the transition between colors of the scale. Is it possible?

Personally I prefer light colors for light winds.

Taking your code but simplified, you don’t need 16 digits after the decimal point

you can get more creative with the color palette and add narrow bands of color as a proxy line to highlight a threshold value - in the above image 'gale force winds'.
