      This is possible if you design your color scale according to this diagram :

      Example with a small smoothed transition between colors on customized scale for Wind

      This scheme was applied recently in the new Icing severity layer.

      Note the color legend still remain smoothed. So you need to design your own legend.

            you can get more creative with the color palette and add narrow bands of color as a proxy line to highlight a threshold value - in the above image 'gale force winds'.
