Why can't I go back a week and see the daily past weather?

You can see past weather by looking at radar and satellite layers available a week or more ago. These are observed weather conditions.
For wind, temperature, or rain, you can look at one or more weather stations that provide about a week's worth of reported data.
Note that weather model layers are forecasts but not observations.
