I know Scotlands weather is notorioudly bad but this is crazy

It is not crazy because what you show is the Satellite layer.
Displayed temperatures in this layer are brightness temperatures measured from cloud tops. It is not the air temperature measured at 2m high.

You can check that everywhere not only in Scotland. Selecting the infrared option (INF) in Satellite layer should help you to understand the meaning of these temperatures (the colored clouds from blue to red shows the highest clouds and so the coldest ones).
