what does the grey shaded area that goes up and down on the windy app forecast represent? I drew a red line on top of the Grey area I'm wondering about.

This area shows the variation of the forecast temperature. You can check it by looking at maximum / minimum forecast temperature.
In the detailed forecast table you find a similar curve.
