Is there or is it possible to have an option to plot surface pressure along a path defined in the Distance and Planning Chart? Such that pressure gradient may be visualized there. Thanks.

I don’t know why you want to plot the pressure along the path in the route planner. You should explain why you would like to get this data. But the current UI does not make it possible.
A very rough workaround is to display the Pressure layer together with the route planner diagram.
Here is the Pressure map with my customized color scale for pressure (gradient of blue for pressure less than 1013hPa and gradient of red for pressure higher than 1013hPa, so not very different from the default Pressure layer in Windy). Remembering the color will give you an idea of the expected pressure along the route.

But it is important to note that Pressure in Windy is the pressure at sea level (amsl), not the pressure at ground level. If you foresee a trek in the Himalayan montains, Windy can’t forecast directly the pressure at ground level.
