Getting parameters data

I'd like to know if how do you get the data of all parameters(eg. Temp, humidity etc) for a certain location(lat, lng), where is the data stored for a particular picker with all the values.

Forecast data provided by European (ECMWF, DWD etc) , U.S. organizations (NOAA/NWS) and/or National Meteorological Services, usually in the form of GRIB files.
