I only see northern hemisphere layers for this.

This data is gathered by volunteers with self-made lightning detectors. On the African continent several additional detectors are needed for a better coverage. The real time lightning data is currently grabbed without permission from the Blitzortung.org website.

Unfortunately, very few weather agencies offer open data services, which is why Windy only covers a few countries with radar.
