I assume you are talking about the Route planner.
I agree with your first suggestion. The wind direction reference (North up, Left to right, ...) is so hidden that if you don't check it every time you risk making a mistake in wind planning. So it would be useful to save it as a permanent setting.
Regarding speed, a permanent setting seems less necessary because it is displayed on the graph itself. (I would prefer to be able to adjust the speed on each leg between WP).

I see you are now using StarLink equipment. So you have broadband internet connection … and Windy at sea.
