Hello,
It seems to me that your suggestion is already offered in Windy.
In the browser version with a right click on the mouse you open Distance & planning.
Plot your route on the screen and choose Boat in the Route planner which allows you to know the weather you will encounter along the route.
Show your average speed.
In More options you can check that the way point coordinates are correct and that North up is selected. Even if the route track is not precise, remember that ECMWF has a 9km resolution. For more precision you can import a GPX file.
Then you can choose the departure date.
